When eggs are beaten, the proteins start to break apart and then get tangled up, and this new matrix acts like a net to hold air and the cake’s shape. Baking powder contains alkali and acid. When the cake is heated, the alkali and acid react and release water and carbon dioxide. The bubbles in the gas stay in the cake and help it to rise. | 3
